TELL US YOUR STORY
Like many of us, I had always loved watching my Mum (and my Nan) baking delicious treats as a young girl and I guess the feeling that gave me has stuck.
HOW LONG HAVE YOU BEEN MAKING WEDDING CAKES?
I started my business 2012 and at that time I was offering all kinds of cakes, but I quickly realised that my passion lay in wedding cakes and so I reduced my product line and concentrated on establishing myself as a Wedding Cake Designer.
WHERE ARE YOU BASED AND HOW FAR DO YOU COVER FOR WEDDINGS?
I am based in a village called Feering in the Essex countryside (between Chelmsford & Colchester off the A12). I deliver throughout Essex, Suffolk and London but am happy to accommodate clients further afield too.
CAN YOU MAKE CAKES FOR PEOPLE WITH DIETARY REQUIREMENTS?
Yes, I can cater for dairy and gluten-free clients but not those with nut allergies, as I use nuts in some of my bakes.
CAN COUPLES SAMPLE YOUR CAKES BEFORE BOOKING?
Absolutely. I offer face to face tasting and design consultations at my home studio. For clients who are unable to attend in person, I send a Luxury Taster Box for them to enjoy at home, we then have a consultation via Zoom or Facetime.
WHAT CAKE TRENDS ARE YOU LOVING AT THE MOMENT?
My design style focuses on ethereal influences. I love light, airy elements paired with lots of texture, giving a beautiful natural look. This year I am loving, big blousy statement sugar flowers, semi-transparent blossoms and organic textures.
DO YOU OFFER CAKE STANDS? IF NOT WHICH WOULD YOU RECOMMEND?
I do indeed hire out my cake stands. Where and how a wedding cake is displayed can really make a huge difference, it’s so important but often overlooked. Wedding cakes are an investment and should play a big part in the décor at a wedding venue. I work with all my clients to ensure we achieve this.
DO YOU MAKE OTHER WEDDING RELATED BAKES?
I offer a variety of accompanying treats and favours, such as cookies, chocolates, cake popsicles, chocolate covered oreos. Again, how these are presented is so important. Whether you choose beautifully decorated cookies individually wrapped in a cellophane bag and tied with ribbon, or a fully styled show stopping desert table, they need to wow your guests.
DO YOU DRAW UP A MOCK DESIGN OF CLIENTS WEDDING CAKES?
Following a tasting/design consultation I create a bespoke design sketch incorporating all the elements that were discussed and agreed at the consultation. This provides a great visual representation of the cake to ensure that my vision matches (hopefully exceeds!) the clients.
DOES THE TOP TIER OF A WEDDING CAKE HAVE TO BE FRUIT CAKE?
No not at all. The old tradition was for a couple to keep the top tier for the Christening of their first born. Times have changed and most of my clients prefer a different sponge flavour for each tier.
DO COUPLES HAVE TO CUT THE CAKE? IF SO WHICH TIER SHOULD THEY CUT?
The ‘cutting the cake’ tradition symbolises the first activity the married couple do together. This is still very much part of the big day and is also one of the key wedding photos, but whether or not the cake is actually cut, is something that should be discussed with the venue. If the cake is cut, I would recommend the bottom tier.
WHAT FLAVOUR CAKES DO YOU MAKE? AND DO YOU OFFER BESPOKE FLAVOURS?
A wedding cake should taste amazing as well as look incredible. I have an extensive menu (see the menu here) offering signature and classic flavours. I am also happy to develop bespoke flavour profiles.
DO YOU WORK WITH FLORSTS IF A CLIENT WANTS THEIR CAKE DECORATED WITH FLOWERS?
As I specialise in sugar flowers, many of my clients choose this option on their design. If fresh flowers are preferred, I work with the client’s florist so that they know the design concept and how many/which flowers to make available to me on the morning of delivery. I usually spend around an hour at the venue preparing the fresh flowers and decorating the cake.
WHEN WOULD YOU ADVISE COUPLES BOOK THEIR CAKE BAKER?
Certain dates get filled to capacity really quickly so I would definitely recommend booking 12-18 months in advance. Shorter lead times can often be accommodated for off-season dates (November-March).
